The variety is a chance seedling found in the 1930s in Germany. Historically, it became widespread as a rootstock for grafting other apple trees due to its vigor and good compatibility with scions. The tree is vigorous, can reach 6 meters or more at maturity, and possesses a powerful root system.
Fruits ripen from mid-October to mid-November and can be stored until March. They are small to medium-sized, round-flat in shape, light green to lemon-yellow in color, often with a red-orange blush. The flesh is white, firm, and juicy, with high sugar content and pronounced acidity.
The plant is characterized by high resistance to scab, powdery mildew, and low temperatures. At the same time, the variety can be susceptible to canker and collar rot, and is also sensitive to fire blight. Bittenfelder is not a dwarf rootstock, despite being erroneously classified as a paradise apple in some classifications.
