The Barone di monteprofico variety is a local (autochthonous) variety common in the Lecce province. It is not a product of directed breeding and represents a part of the rare genetic diversity of olives.
This variety belongs to the oilseed category. Studies of its characteristics focus on the biochemical composition of the oil, in particular, a low total polyphenol content is noted.
