Bella di Cerignola is an autochthonous variety, historically associated with the Cerignola area in the province of Foggia. The fruits are characterized by their large size, reaching a mass of 11 to 18 grams. The shape of the olives is elongated, resembling a plum, with a narrowed base and a thin, pointed apex. The flesh is firm and easily separates from the pit.
The variety is intended exclusively for table use. Harvesting is carried out in October. Depending on the degree of ripeness, the olives can be processed using the "Seville" method (for green fruits) or the "California" method (for black ones) to remove bitterness. The taste of the finished product is described as balanced and slightly fruity.
