Blanche de Payzac is an old local variety, restored in the 1990s after a period of decline. The plant has medium vigor and belongs to the partially self-fertile varieties included in genetic group G1 according to the pollination compatibility classification.
The variety is adapted to the climatic conditions of northern olive-growing regions and can grow on soils with shale, granite, or sandstone foundations. The primary purpose of the fruits is oil extraction; the oil is distinguished by an intense green fruity flavor with notes of fresh grass, apple, and pear.
