Capelen is an ancient local variety grown mainly in the vicinity of Anduze. The tree has an upright crown that takes on a rounded dome shape with age, with stiff, upright branches and a tendency to form deadwood. The leaves are positioned so that their underside is often directed outwards.

The mid-maturing variety forms compact fruit clusters. Ripe olives are distinguished by a spotted tiger pattern that turns black with a glaucous bloom. The fruits are not very fleshy but contain a lot of oil, which has a yellowish-green color with golden hues and is easily extracted.

The plant is considered very hardy and fertile, and possesses satisfactory resistance to diseases, pests, and cold. The variety was developed through folk selection and is rare today.
