The tree is characterized by medium vigor and an assurgent crown type. The main morphological feature of the variety lies in the color of the fruits: unlike ordinary olives, which turn dark during the accumulation of anthocyanins, Cannellina fruits acquire an ivory color. The fruits themselves are small.

The variety has a low oil content in the fruits compared to industrial varieties. Currently, it is considered as part of the historical gene pool, representing interest for the study of biodiversity, and is classified as an endangered variety.
