The Cannellino olive variety is used in the production of olive oil with the protected designation of origin Vùlture DOP. In blends, it serves as an additional component, most often mixed with the main variety Ogliarola del Vùlture, the share of which is at least 60%.

Detailed morphological characteristics of the plant, including height, yield indicators, or disease resistance, are absent in open sources. The variety is considered a local ecotype of folk selection, mentioned primarily in regional production regulatory documents.
