Variety description

10 August 2026

The variety is native to the Chalkidiki peninsula and northern regions of Greece, having been formed through centuries of folk selection. The fruits have a cylindrical-conical shape with a pointed tip, and their weight ranges from 4 to 14 grams. A distinctive feature is the high pulp-to-pit ratio, which is approximately 9:1, making the olives suitable for stuffing.

Harvesting of fruits at the green stage of maturity is carried out from mid-September to mid-October. The fruit pulp is firm and crisp, and the flavor is characterized as fruity, slightly tart, and piquant. In addition to being used fresh and pickled, the variety is used for olive oil production.
