Cordovil de Elvas trees have an open-type crown with a pronounced tendency to droop. The variety is an autochthonous genetic resource of the Elvas region and belongs to the Cordovil genetic family.

The primary purpose of the variety is olive oil production, however, the fruits can also be used for processing into table olives. The variety belongs to the medium ripening category. Agronomic studies are investigating the variety's reaction to adverse climatic conditions and the specific characteristics of fruit processing.
