The Cornacchiola tree has high vigor and forms an upright-type canopy of medium density. The variety is self-incompatible and requires pollinators such as Romanella, Frantoio, or Leccino. It enters fruit-bearing at a medium age and is characterized by good yields with biennial bearing.
The fruits have an ellipsoidal shape and turn black when fully ripe. The variety is considered resistant to abiotic stresses and olive knot (Pseudomonas savastanoi pv. savastanoi), but is sensitive to the olive fruit fly and the fungal disease peacock spot (Spilocaea oleaginea). The recommended harvest period is from the end of October to early November.
Oil from the fruits of this variety has a high oil content, a light fruity aroma with notes of grass and almond, and moderate bitterness and pungency. Due to its qualities, the variety is used both for oil production and as table olives, including the preparation of dried or dehydrated fruits.
