Cornetta is an indigenous Italian olive cultivar that evolved through folk selection. Currently, this cultivar is considered rare and is at risk of extinction.
Oil obtained from the fruits of this cultivar belongs to the first typology of monovarietal oils with medium fruitiness intensity. The product possesses aromas of artichoke and almond, and its taste combines initial sweetness with moderate notes of bitterness and pungency.
