The Cordovil de Moura variety is indigenous to the Portuguese Alentejo region and is used for both olive oil production and table olive processing. The tree is characterized by high yield with pronounced alternate bearing and is suitable for mechanical harvesting using trunk shakers.

The plant is sensitive to cold, drought, and soil salinity, showing medium tolerance to calcareous and alkaline soils. The variety has high susceptibility to the fungal disease peacock spot and is highly prone to olive fruit fly infestation.

Olive oil from this variety is characterized by storage stability due to its high oleic acid content. The sensory profile of the product includes pronounced bitter and spicy notes with herbaceous undertones reminiscent of tomato stems.
