The Ogliarola del Vulture variety is an ancient local ecotype that developed in the area of Mount Vulture. It is adapted to specific growing conditions on volcanic soils of the foothills at an altitude of 500–660 meters above sea level, and tolerates winter cold and daily temperature fluctuations well.
The variety is used for oil production and is a key component for oils with the Protected Designation of Origin Vùlture. The resulting oil has a harmonious taste with notes of fresh herbs, artichoke, and almond, with a light bitterness and pungency.
