The Tisignana variety belongs to the traditional biodiversity of Tuscany. Its primary economic purpose is the production of high-quality extra virgin olive oil.

The oil of the variety is characterized by a specific profile of volatile compounds, in particular a unique ratio of C6 and C5 fractions formed via the lipoxygenase pathway. The variety is actively used in genetic research using microsatellite markers and chemical analyses of oil composition.
