Throumpa-type olives ripen or over-ripen directly on the tree under the influence of climatic conditions and the fungus Phoma oleae. The fruits have a cylindrical-conical shape with a slight curve and a small nipple, reaching a weight of 1.5 to 5 grams. At the stage of full maturity, they acquire a black color and a characteristic wrinkled skin.

The pulp makes up 79 to 84% of the fruit. The harvest, collected by hand from November to January, undergoes dry salting for 30–40 days to reach a marketable condition. This is a table product that can also be used to produce olive oil.
