TONDELLO is a local name for the Moraiolo variety, common in Central Italy, especially in Tuscany. The name reflects the shape of the fruits: in Italian, tondo means round.
The tree is characterized by an upright crown and low to medium vigor. The variety is sensitive to low temperatures, recovers slowly after pruning, and is susceptible to diseases such as peacock spot and olive knot (Pseudomonas savastanoi).
The fruits of the variety are small and round, used primarily for processing. The olive oil obtained from them is distinguished by a balanced taste with spicy and bitter notes, as well as aromas of artichoke and herbs.
