Caiño Longo is a traditional local red grape variety with a short growing cycle. The plant has vigorous growth with a horizontal shoot orientation. The variety is characterized by drought tolerance and the ability to adapt to less fertile soils provided there is sufficient potassium supply.

The variety has moderate susceptibility to powdery mildew, Botrytis and phomopsis, and is also sensitive to sunburn of the clusters. Agrotechnics of the plant allow for short pruning. Genetic studies confirm the presence of intraspecific diversity and the identification of different genotypes.

The grapes are used exclusively for wine production, which is characterized by an intense fruit-floral aroma, freshness and good acidity. The variety is often used in blends with other local species to add complexity and freshness to the drinks, although monovarietal wines also exist.
