The variety is the result of crossing Grenache and Malbec. The plant is characterized by medium to high vine vigor and a medium to medium-late ripening period. An important breeding feature of the variety is its high resistance to flower abortion (coulure), as well as resistance to grey mold and lower susceptibility to downy mildew.

Bunches are medium-sized, conical, often winged, and of medium density. Berries are medium-sized, dark blue with a thick waxy bloom and thin skin. The leaf is medium, usually three- or five-lobed, and deeply dissected.

Caladoc is used for the production of red and rosé wines. Red wines are characterized by intense color, pronounced tannins, high alcohol content, and aromatics with notes of wild berries, spices, black fruits, and balsamic undertones. Rosé wines are characterized as fresh, aromatic, and balanced.
