The variety has a perfect flower and round, five-lobed, slightly dissected leaves. The bunches are medium-sized, cylindrical or cylindrical-conical, often with a wing, and medium-dense or loose. The berries have a very dark, almost black color and thin skin, which results in the low color intensity and tannin levels of the wines produced.

The plant has high yield, which requires control to maintain product quality. The variety is characterized by susceptibility to fungal diseases, including anthracnose and flavescence dorée, as well as sensitivity to frost and wind damage. In addition to the main variety, there is its mutation Grolleau Gris.

Wines made from Grolleau are distinguished by high acidity, moderate alcohol content, and red berry aromas, such as strawberry and raspberry. Due to the lightness of its structure, the variety is often used in blends with other varieties, for example, with Gamay.
