Savvatiano is an indigenous variety of the Attica and Central Greece regions. It is a late-ripening wine grape variety with very vigorous shoot growth.
The plant possesses high resistance to heat and drought, which allows for cultivation without irrigation. Resistance to powdery mildew and downy mildew is rated as medium.
Bunches are large and dense, berries are of medium size. Wines from this variety are characterized by moderate acidity and body, often containing aromas of yellow fruits, citrus, and herbal notes. The variety is suitable for aging in oak barrels.
