The variety is the result of a natural cross between Pinot noir and Gouais blanc. The vines are characterized by moderate growth vigor and good cane maturation. Leaves are medium-sized, rounded, and moderately lobed. Small, dense clusters are cylindrical-conical in shape; berries are rounded, dark blue with a waxy bloom and juicy, colorless pulp.

The period from bud burst to technical maturity is approximately 159 days with an active temperature sum of 3020°С. Yield varies from 80 to 130 c/ha. Cold hardiness allows it to withstand temperatures down to -22°С. The variety is relatively resistant to downy mildew and powdery mildew, but has low resistance to gray mold and phylloxera.

Wines from Gamay noir are characterized by high acidity and low tannin content. Their aroma is dominated by fruit notes, including strawberry, cherry, raspberry, and sometimes banana. The best product quality is achieved in regions with a temperate climate.
