The variety ripens in early October. The berries acquire a characteristic yellow hue upon full maturity. The grape is characterized by very high acidity and moderate sugar content, which is why the variety is traditionally used in winemaking as a component for blends, adding freshness to the wines.
In recent years, Rumeni plavec has become widespread in the production of premium sparkling wines, especially in the Bizeljsko-Sremič region. The variety shows susceptibility to powdery mildew. Previously, it was sometimes used as a table grape, however, its flavor characteristics are more suited to winemaking requirements.
