The grape ripening period is calculated as the number of days from bud break until the berries reach the conditions characteristic of the variety. The final phase is determined visually by changes in color, pulp consistency, and ease of detachment from the pedicel, as well as analytically by sugar accumulation levels and a decrease in acidity.

Varieties are categorized into groups based on the duration of the growing season, ranging from ultra-early, taking 95–105 days, to late, requiring 145–165 days or more. Selecting a maturity group involves risks: overly early varieties are vulnerable to late spring frosts, while late varieties may not accumulate sufficient sugars before autumn cold spells or may suffer damage from precipitation, which causes berry cracking and rot.
