Turnip seeds are capable of germinating at soil temperatures of +1…+3 °C, with mass emergence observed at +5…+6 °C. Seedlings of this crop are characterized by the ability to withstand frosts down to –2…–4 °C, while mature plants remain viable during short-term temperature drops to –5…–6 °C.

Low cold tolerance in a variety manifests primarily through a physiological response to low temperatures: premature bolting. This leads to the development of a flower stalk and the formation of coarse, woody root crops unfit for consumption, despite the plant's own resistance to leaf damage.
