Citrus sinensis (L.) Osbeck
A critical quality parameter of oranges, determined by titration of the juice with an alkali. In mature fruit, the citric acid content ranges from 0.5% to 1.0%, and the minimum sugar-acid ratio for commercial maturity is set at 6.5:1.

Orange acidity is determined by the method of titrating juice with an alkali solution until the equivalence point of pH 8.2 is reached. The result is expressed as the mass fraction of citric acid in percent or grams per 100 ml of juice. Titratable acidity is the primary indicator of the concentration of organic acids that determine the flavor of the fruit.
During the ripening process, the acidity level in orange fruit naturally decreases while sugar content increases. To assess the degree of maturity and flavor balance, a sugar-acid ratio is used, which is the ratio of sugar content in degrees Brix to the percentage of titratable acidity.
Agronomic control of acidity allows for the determination of optimal harvest times. Fruit that does not meet the standards can be sent for post-harvest ripening under specialized conditions. An adequate acidity level also influences the resistance of oranges to microbiological spoilage during storage.
