The suitability of oranges for industrial processing is determined by juice yield, chemical composition of the fruit, and the content of specific compounds that affect product quality.

Key criteria for suitability are the soluble solids content, measured in degrees Brix, acidity, and their ratio, which determines the flavor balance. Important factors include the content of limonin, which causes bitterness, and the activity of the pectin esterase enzyme, which affects the stability of juice consistency during heat treatment.

Physical parameters, such as size, shape, and peel thickness, are critical for the operation of automated juice extraction lines. Unlike fruit for the fresh market, cosmetic peel defects are of secondary importance for industrial raw materials, while frost damage and microbiological spoilage are unacceptable.

Processing technology is aimed at preserving organoleptic properties through the inactivation of pectin esterase under strict temperature control. The peel, which accounts for up to half of the fruit's mass, is used as secondary raw material for obtaining essential oils, antioxidants, and phenolic compounds.
