For industrial potato processing, a high dry matter content of 20–24% or higher is critical. In the production of fried products, the content of reducing sugars must be minimal, typically no more than 0.25–0.4%, to prevent darkening of the product resulting from the Maillard reaction. Starch content determines both the yield of starch products and the textural characteristics of the finished item.

Morphological indicators include uniform tuber shape to minimize waste during mechanized cutting and peeling. Eye depth should not exceed 1.5 mm, as deep eyes increase processing losses. Cultivars must maintain their technological properties during storage, as changes in temperature regimes can lead to an undesirable increase in sugar levels and the loss of raw material suitability.
