Fruits of the Cariasina variety have a small size and a smooth surface. Taste qualities are characterized as delicate, with fruity notes of almond and light aromatic undertones. In traditional cooking, olives of this variety are prepared by natural fermentation in brine.
The variety belongs to ancient local cultivars that have historically been propagated vegetatively by farms. Cariasina is considered a dual-purpose variety, although the oil content in the fruits is estimated as low. The plant is often used as a pollinator for the main Sardinian variety Bosana.
