The Carolea tree has a dense and compact crown, is frost resistant down to -10 °C, and exhibits alternate bearing. The fruits weighing 4–8 grams have a characteristic slight elongation at the tip. Veraison occurs late; the optimal harvest period for oil is October–November, and one month earlier for table purposes.

The oil of the variety has an intense fruity aroma with notes of apple, almond, artichoke, and fresh grass, as well as medium bitterness and pungency. Since the olive is a cross-pollinating plant, effective fruiting requires pollinators such as Itrana, Picholine, Maurino, Pendolino, or Ottobratica.
