Cellina di Rotello is a traditional variety that emerged as a result of centuries of folk selection in the vicinity of the Rotello municipality. The variety is used to obtain high-quality monovarietal oil or as part of local blends with local varieties.
A biological feature of the variety is a high level of fruit set during self-pollination, exceeding 30%. The variety is valued for the stable production of fruits suitable for processing.
The oil of this variety is characterized by a balanced taste with notes of bitterness and pungency. The aroma is dominated by shades of fresh greenery, artichoke, and apple, with rare notes of wild berries sometimes appearing. The product is distinguished by a high content of polyphenols, which ensures antioxidant properties and long shelf life.
