The MORCHIONE variety belongs to the traditional olive heritage of Tuscany and is mentioned in studies of the local gene pool. Its cultivation is aimed at the production of olive oil characteristic of this region.
A key morphological feature of the variety is its resistance to low temperatures. The ability to retain green foliage during severe frosts distinguishes it from other varieties, allowing the tree to be grown in conditions outside the scope of the typical Mediterranean climate.
