The Morchiaio variety (synonym MORCHIOLO) is traditional for Tuscany. The tree has low vigor and an upright canopy, which historically allowed olive plantings to be intercropped with other agricultural crops. The leaves are small, elliptic-lanceolate in shape.
The fruits are medium-sized, ovoid, and slightly asymmetrical, acquiring a purple-black color upon ripening. The variety belongs to late maturity groups. Yield is low and irregular, which is due to a high percentage of ovary abortion, reaching 80%.
The variety tolerates low temperatures well but is sensitive to the fungal disease "peacock spot" (Spilocaea oleaginea). The oil produced is characterized by a high content of oleic acid and polyphenols; however, industrial use of the variety is limited due to low productivity and low oil yield.
