The PICHOLIN tree has moderate growth vigor and a spreading crown with large elliptical-lanceolate dark green leaves. The fruits have an average size of 3 to 5 grams and are characterized by an elongated, slightly asymmetrical ovoid shape. During the ripening process, the color of the olives changes from bright green to wine-red and black.

The variety is mid-late, with harvesting taking place from September to December. PICHOLIN is partially self-fertile and comes into bearing early. The plant shows good resistance to drought and fungal diseases such as peacock spot, but is susceptible to the olive fruit fly.

This is a dual-purpose variety used both for canning and for oil production. The fruits are valued for their firm, crunchy flesh, which makes them popular as table olives. The oil is distinguished by a balanced taste with notes of grass and fruit, moderate bitterness, and a slight peppery aftertaste.
