The Serrana de Espadán variety, also known as Serrana, Sevillenca, Grossal or Artanenca, is a local variety originating from the area of the Espadán and Calderona natural parks in Spain. It is cultivated primarily on mountain slopes and terraces under Mediterranean climate conditions.

Oil from this variety has a mild taste with slight bitterness and pungency; the flavor profile includes notes of fresh grass, apple, kiwi, lemon, as well as nuances of rosemary, walnut and artichoke. Harvesting is carried out manually or using hand-held shakers.
