Sauzen Vert is an old local variety classified as an additional variety for a number of French regions. The variety is included in programs for the conservation of historical varietal diversity.

The primary purpose of the fruit is olive oil production. Sometimes the fruit is described as being large enough for table use. Due to the historical nature of the variety, several local types may have been grouped under this name, for which laboratory analysis of fatty acid composition is used for clarification.

It is used mainly in blends with varieties such as Picholine, Négrette, and Rougette to impart specific organoleptic qualities to the oil.
