The term selvatico translates from Italian as wild and is used to designate wild-growing specimens or feral forms of the olive tree. In some regions of Italy, this name can be used as a synonym for certain local populations, however, it does not indicate a single genetic profile.
Wild forms of olive are characterized by lower yields compared to cultivated varieties, and their fruits are usually smaller. The trees often feature a dense crown and may have thorns. Oil from such olives possesses a pungent taste with a noticeable bitterness and an increased concentration of polyphenols due to the significant genetic diversity of the plants.
