Blauer Wildbacher is a very old variety, genetically derived from the Heunisch Weiss variety. The leaves are round, five-lobed, and medium-dissected. Bisexual flowers form medium-sized, dense or medium-dense conical clusters, often with a wing.
The berries of the variety are small or medium-sized, dark blue in color with thick, firm skin and juicy flesh with a herbaceous taste. The grapes are sensitive to late spring frosts and prone to downy mildew, powdery mildew, and berry rot. Yield is medium and unstable.
The variety is used for the production of rosé wines with pronounced acidity, fresh fruit aroma, and herbaceous notes, as well as for the creation of sparkling wines.
