The variety is of natural origin, resulting from the crossing of Gouais blanc and Blaue Zimmettraube varieties. Mentions of it appear in documents from the 18th century, and the name is associated with the Franconia region. The plant is characterized by vigorous growth and good cane ripening.

Morphologically, the variety is distinguished by large five-lobed leaves with coarse teeth. The clusters are large, dense, and conical in shape; the berries are blue-black and round. The variety possesses winter hardiness but is sensitive to spring frosts due to early bud burst and requires warm, sunny sites.

Wines from Blaufränkisch have a high aging potential, including in oak barrels. Its flavor and aroma profile is dominated by notes of cherry, plum, blackberry, blueberry, black pepper, and spices.
