The Zervin variety belongs to wine grape varieties. It is capable of accumulating a high sugar level in the must of up to 22–24 degrees by the end of August, which indicates an early or medium-early ripening period.

The grape is used in winemaking, including for the creation of natural sparkling wines. Wines from this variety possess a specific “volcanic” mineral profile and are characterized by the stability of extractive substances.
