The processing technology for sweet cherries is determined by the fruit's low natural acidity and the risk of hydrocyanic acid release during stone storage. The crop is not suitable for pickling and requires specific raw material preparation conditions due to the high respiration rate of the fruits.

Due to insufficient organic acid content, the canning of sweet cherries requires the mandatory addition of citric acid to ensure microbiological stability and color retention. Unlike sour cherries, sweet cherries require smaller amounts of sugar in syrup and jam formulations.
When canned with the stone, the product's shelf life is limited to one year to prevent the accumulation of toxic hydrocyanic acid. Fruits for processing must be whole and firm, as overripe pulp cannot withstand thermal treatment, and pre-processing requires mandatory soaking in cold water.
Classic pickling of sweet cherries through fermentation is not a generally accepted practice. Technologically, the fruits are primarily used for preparing compotes, jams, or marinating as part of appetizer preserves.
