The ability of apple fruits to maintain their commercial and quality characteristics during storage, determined by the genetic potential of the cultivar and cultivation practices.

To evaluate the storage life of apple fruits, a complex of physicochemical indicators is used, the key one being flesh firmness, measured in kg/cm² using a penetrometer. Additionally, the iodine-starch test, refractometric determination of total soluble solids, and the calculation of maturity indices are employed.
Flesh density values depend on the cultivar: for instance, Renet Simirenko is characterized by values of about 9.5 kg/cm², while for cultivars such as Kimmeria, it is about 7.3 kg/cm². High storage life ensures the preservation of fruits until the next harvest, whereas with low storage life, commercial qualities are lost within a month.
The indicator is significantly influenced by harvest dates, which are determined based on the sum of active temperatures and the hydrothermal coefficient. Agrotechnical practices, such as irrigation regimes and the method of soil management in the orchard, also have a significant impact on the storage potential of a specific cultivar.
