Peach Sugar Content

An indicator of quality and taste characteristics of peach fruits, determining their suitability for breeding and the market, expressed through the content of soluble solids in degrees Brix.

The total sugar content in peach fruits ranges from 6.15% to 12.11%, and the level of soluble solids typically amounts to 11.0–15.5%. The optimal value for commercial fruit is considered to be the 12–15% range on the Brix scale, where 1 °Bx corresponds to 1 g of sugars per 100 g of juice.

The integral indicator of taste quality is the sugar-acid ratio, calculated as the ratio of sugar content to titratable acidity, which in quality cultivars is within the range of 5.65–15.2 units. To evaluate these parameters, the refractometric method, infrared scanning, or laboratory chemical analysis are used.

Sugar accumulation in the fruit depends on the cultivar genotype, the level of photosynthetic activity, and agrotechnical factors such as canopy illumination and potassium nutrition during the fruit growth phase. Monitoring sugar content is a key criterion in determining optimal harvest times and the suitability of fruits for processing.
