The plant forms dense cylindrical heads 20–30 cm tall with dark red leaves and distinct white veins. The variety group is divided into early types, ready for harvest in September, and late types, which require exposure to frost to form their characteristics.

To achieve a marketable appearance, a method of blanching in the dark is used, which reduces bitterness and makes the leaves more tender. Taste qualities include a characteristic bitter aftertaste with nutty notes, which softens during heat treatment or after exposure to cold.
