The Cayet roux variety, also known as plant de Figanières, is an ancient local variety. Its fruits have firm flesh and thick, coarse skin, acquiring a characteristic reddish-brown hue upon ripening.
The variety is early-flowering and cold-tolerant. Under adverse growing conditions, the fruits may be susceptible to premature rot and fruit drop in the autumn.
Oil from the fruits of this variety is characterized as mild, with distinct aromas of apple, green notes, and hay.
