The Grignan tree has medium to low vigor with an upright, compact crown and elliptical leaves. The small to medium-sized fruits weighing 2–3 g have an elliptical shape and turn black-violet upon ripening.
The variety belongs to the oil type and is characterized by early, synchronous ripening. It possesses resistance to cold, as well as to peacock spot and olive knot, but is susceptible to the olive fruit fly. Yield is medium, and fruiting may be irregular.
The plant is self-sterile and requires pollinator varieties such as Leccino, Casaliva, Pendolino, and Trepp. The variety does not tolerate heavy pruning well, as this induces active growth of vegetative shoots.
