The Olivière tree has a weeping branch habit and elliptical leaves. The fruits are ovoid and asymmetrical in shape, turning black when ripe. The fruit pit has a pointed tip and a rounded base.

The variety is self-incompatible and belongs to the early-ripening group. Despite the low oil content per fruit, the variety is valued for its high total yield. The plant is characterized by extremely high cold resistance, which has led to its distribution in the regions of southern France.
