The name Piliou refers to a regional product with a Protected Designation of Origin (PDO). Biologically, these olives belong to the Konservolia variety, also known by the synonyms Voliotiki and Amphissis.
Fruits of this type are table olives, have an oval or asymmetric shape and an average weight of about 7 g. At the stage of full maturity, they acquire an intense black color, and their flesh is characterized by a firm consistency and ease of separation from the pit.
Trees of the Konservolia variety are distinguished by high vigor and a spreading crown. The plants are considered self-fertile, however, the presence of pollinators can positively influence yield. This variety possesses good cold hardiness but shows sensitivity to moisture deficiency.
