Salar d'Arbúcies is a local variety cultivated in the Arbúcies valley. Mentions of the cultivation of local olives in this region are found in historical documents from the 16th century, and archaeological data indicate the use of local fruits for oil production starting from the 14th century.
The plant is used exclusively for obtaining Extra Virgin olive oil. The oil is characterized by a high oleic acid content of about 77% and a complex aromatic profile, including notes of tomato, artichoke, walnut, almond, and mint, with a pronounced balance of bitterness and pungency in taste.
