Ogliarola Salentina is an ancient variety with vigorous trees over 15 meters tall, having a drooping crown of medium density. The variety has high but periodic productivity and is used exclusively for the production of oil with aromas of freshly cut grass, tomato, and almond. The trees are susceptible to diseases and suffer severely from Xylella fastidiosa.

Cellina di Nardò is characterized by vigorous growth, an upright habit, and a dense crown with small, oval leaves. The variety is noted for its high cold tolerance and stable yield. The black-blue fruits are used for the production of oil with notes of berries and herbs, as well as for table olives.
