The name Bovale originates from the Latin word for "bull" and is often associated with the shape of the bunch. Under this name, Spain historically refers to the Bobal variety, characterized by high yield, intense berry color, and the ability to impart high acidity and tannin to wines.
On the island of Sardinia, other varieties appear under the Bovale label: Bovale Sardo, which may be identical to the Graciano variety, and Bovale Grande, considered identical to the Carignan variety.
When describing the characteristics of the Bobal variety, a late ripening period, vigorous vine growth, and five-lobed dark green leaves with pubescence are noted. The bunches are medium to large in size and conical in shape; the berries are round and blue-violet in color. The variety is resistant to downy mildew, powdery mildew, grey mold, and drought.
